How to Make Three Cheese White Pizza
For this recipe, I skip using my pizza sauce recipe. Instead, I use ricotta cheese as my base and spread it onto my homemade pizza dough, top it with big hunks of mozzarella and then with parmesan that I grate right over the top.
Prep. Drizzle olive oil onto a baking sheet pan or a pizza pan and place pizza dough onto the pan. Drizzle additional oil onto the dough.
Add the cheeses. Using a rubber spatula or the back of a spoon, spread the ricotta cheese over the crust, leaving an edge to the dough for the crust. Then add the mozzarella slices and top with the Parmesan cheese.
Bake. Place into the preheated oven and bake as directed until the pizza crust is golden brown and the cheese melts and begins to bubble.
Serve. Once the pizza is done, remove it from the oven, slice, and serve.
Once I take it out of the oven, I work quickly because everyone is ready for fresh, hot pizza at my house! I like to serve a huge house salad or Caesar salad with it.
This simple pizza recipe works perfectly for pizza night at home, tailgating with friends and family, or even for entertaining. Just be sure to make extra! It goes quickly!

Can this be made in a cast iron skillet?
You can use an iron skillet to make this pizza, Erlene. Hope you enjoy!
What type of Parmesan cheese? Grated In bottle or in a round, butter type of container?
Erlene, I grate my Parmesan cheese from a block but you can use packaged grated cheese if you wish. I just prefer to grate my own.
Just wondering, do you use fresh mozzarella?
Adeline, I don’t use fresh mozzarella but you can if you wish.
Does anyone know how this would work on a tortilla?
Stephanie, I have made pizza on a pita – Pita Pizza (15 Minute Pizza) – and we loved them. I don’t see why a tortilla wouldn’t work.
Robyn,
Have you ever used a cast iron pan to make it deep dish? I am curious if it will turn out like my classic pizza with sauce and cheese… I suppose any creative cook can give it a try right?
