Happy first day of June! I’m still wondering where May went, but so thankful for a new beautiful month ahead of us!
One of my favorite things throughout the summer is to use the grill as much as possible for as many meals as possible. 🙂
My planning goes something like this: Starting the grill? Great, let’s go ahead and cook everything we can possibly cook so that the rest of the week (at least the next few days) is handled.
That’s where this BBQ Ranch Chicken Cobb Salad came to be at our house.
I had prepared our favorite grilled chicken and while it was cooking, decided to go ahead and toss corn on to the grill as well.
I knew I could use both throughout the week in any number of dishes. But, for supper, I was craving this cobb salad!
BBQ Ranch Chicken Cobb Salad Recipe
Once the chicken cooled, I sliced it and then cut the corn off of the cob so that they were easy to use in my cobb salad.
To my mixed salad greens, I added my grilled chicken, grilled corn, halved cherry tomatoes, black beans, bacon, shredded cheese, and diced avocado.
And for serving, I drizzled my salad with my buttermilk ranch dressing as well as this delicious BBQ sauce. The flavors came together for a mighty delicious salad that is on repeat at my house all week long!
One note on this salad. You can also use rotisserie chicken if you prefer in this cobb salad. It will be delicious! You can also include your favorite add-ins to the salad and leave out those that you don’t like. Make it your own based on what you and your family enjoy!

BBQ Ranch Chicken Cobb Salad Recipe
Ingredients
- 6 cups mixed salad greens
- 2 boneless, skinless chicken breasts, cooked and sliced
- 2 cups corn
- 4 slices bacon, cooked and diced
- 1 pint cherry tomatoes, halved
- 1 (15-ounce) can black beans, drained and rinsed
- 1 medium avocado, diced
- ranch dressing
- BBQ sauce
Instructions
- Arrange salad greens in a large bowl or platter. Top with chicken, corn, bacon, tomatoes, black beans, and avocado.
- Drizzle with ranch dressing and then with BBQ sauce. Serve immediately.
Notes
Assemble salad, leaving off the avocado, ranch dressing and BBQ sauce until ready to serve. Store in an airtight container in the refrigerator up to 4 days.Â

So healthy for a bowl of salad! This is the way I often do for my breakfast salad: avocados, tomatoes, black beans, corns, brussels and so on. The ingredient I flexibly change is meat, sometimes bacon, chicken or eggs. Yummy all the time!!
