Talk about the perfect quick-fix lunch!
How to Make Cilantro Lime Shrimp Avocado Salad
To make it, I started with a head of fresh romaine that I chopped and then topped with fresh shrimp, avocado, diced red onions, grape tomatoes, and an amazingly easy and tasty cilantro lime vinaigrette dressing.
I then lightly tossed it all together to make sure everything was evenly coated with the dressing and added just a bit more chopped fresh cilantro to the salad for serving. While it isn’t necessary, it sure does make the salad even prettier, I think.
It is simply scrumptious!

Thank you for sharing this delicious recipe. We enjoyed this yesterday. It was such a hit, and exactly what I was hoping for. The flavors blend together beautifully and are the essence of summer, I think. It doesn’t hurt that the prep time for this dish is relatively short. Cant wait to enjoy this recipe again!
I’m so happy that you enjoyed it too, Suzie! My family loves it – I think it tastes like summer too! Thanks! xo
I made this and it was such a disappointment. The lime juice was sooooo over powering. I should have know better when I saw equal parts of lime juice veras olive oil. I tried correcting it with mayo, and then honey, but this did not reduce the acid. Anyone else have this problem? So sorry I wasted so much money and time on this recipe.
I’m sorry you didn’t enjoy the recipe, Shirlee! I’ve not had a problem with it being too much lime juice for the recipe. Thanks.
This looks delightful, but I’m allergic to shrimp. I’m thinking salmon. Hmmm.
There is something about shrimp and avocado in the summertime. Come on summer already! Looking forward to making this this weekend. Such a great starter while I get the grill going.
This salad looks so delicious and light! I usually go for chicken in my salads but shrimp is going in it next time! Love it 🙂
Thanks so much, Cori! It’s so delicious – I hope you enjoy it! xo
