Sheet Pan Pork Chops with Sweet Potatoes and Apples Recipe

Sweet potatoes, apples, and pork make a delicious trinity in this dish, but the secret to bringing this recipe all together is the sauce! The balsamic vinegar and Dijon round out the sweetness and add just the perfect amount of acidity and tanginess to make it absolutely wonderful!
Ingredients
For this recipe you’ll need the following ingredients:
- Pork chops – I recommend center-cut, boneless pork chops that are cut about 1-inch thick
- Sweet potatoes – you’ll need two medium sweet potatoes that are peeled and cut into 1-inch wedges
- Apples – you’ll need two medium apples that are cored and cut into wedges
For the sauce, you’ll need:
- Olive oil – I prefer extra virgin
- Balsamic vinegar
- Dijon mustard
- Salt
- Black pepper
Make the sauce. Whisk together the olive oil, balsamic vinegar, Dijon mustard, salt, and black pepper.
Step by Step Instructions
Coat the Sweet Potatoes and Apples. Add the sweet potato and apple wedges to a large bowl along with about 1/2 of the sauce over them. Give them a quick toss in the sauce.
Arrange the Pork Chops. Arrange the pork chops on the baking sheet and arrange the coated sweet potatoes and apples around the pork chops, keeping everything in a single layer so that it cooks evenly. Pour the remaining balsamic sauce over the pork chops and spread with a spoon to make sure they are well coated.
Bake. Place it into the oven it goes and bakes until the sweet potatoes are fork tender and the pork chops register 145ºF using an internal thermometer in the thickest part of the pork chop.
Serve. I love to serve with a green salad to completely round out the meal.

Ingredients
- 4 pork chops
- 2 medium sweet potatoes, peeled and cut into 1-inch wedges

- Arrange pork chops on the sheet pan.
- Add the sweet potatoes and apple wedges to a large bowl. Mix together the olive oil, balsamic vinegar, dijon, salt and pepper in a small mixing bowl and pour over the sweet potatoes and apples. Toss to coat the sweet potatoes and apples and arranged around the pork chops. Pour the remaining marinade over the pork chops.
- Bake in the oven until the pork chops are cooked through and a thermometer inserted into the thickest part of the pork chops registers 145º F, about 20 to 25 minutes. Set the oven to broil to caramelize the vegetables, about 3 minutes. Serve immediately.

I made the sheet pan dinner with pirk chops, apples and sweet potatoes. I used balsamic vinegar and it did not resemble the photos. I then realized that she used white balsamic vinegar. I was surprised that the recipe left out that detail. I used what I had already mixed but the appearance wasn’t as appealing.Â

I didn’t use white balsamic vinegar when I made this recipe, but used the standard balsamic vinegar. You can see it as I mix the balsamic and Dijon sauce together in the video. xo

You sure can! I would recommend making sure that your parchment paper is rated for 400º F. Most are rated for that temperature, but I would just make sure.
