These soft, tender cookies look and taste like they take you hours to make, but really only take a few minutes.

How to Make Red Velvet Cookies

These red velvet cookies are so simple to make and always a favorite. To make them, I start by preheating my oven to 350º F. Then, I line my baking sheet with parchment paper or a baking mat.

Next I add my softened butter and granulated sugar to the bowl of my mixer. If you do not have a stand mixer, you can definitely make this using a hand mixer. I’m sure you probably could make this by hand, but I prefer to use a mixer to make sure that the food coloring is completely incorporated into the cookie dough.

Then, using the mixer, I cream together the butter and the sugar until light and fluffy. This usually takes about 3 minutes. Once it is light and creamy, I add in my egg, vanilla extract, buttermilk, and red food coloring and mix until well combined.

In a medium bowl, I add my flour, cocoa powder, baking soda, and salt and whisk until combined. Then, I slowly stir the flour mixture to the butter and sugar mixture until just combined.

I scoop about a tablespoon of the cookie dough and place onto my prepared baking sheet. The cookies only take a little bit to bake, about 9 minutes or so. Be careful not to over bake them or they will turn overly brown. Once baked, allow the cookies to cool completely.

While the cookies are cooling, mix together the cream cheese frosting. To make it, you’ll mix together the  cream cheese and butter until light and fluffy. Add your confectioner’s sugar, 1/2 a cup at a time and slowly stir to incorporate. After each cup has been incorporated, turn the mixer onto the highest speed setting and for about 10 seconds to lighten the frosting. Add in vanilla and beat until well-blended, light and fluffy.

These red velvet cookies are perfect for a make-ahead cookie recipe. To make them, I prepare the cookies and then store them in an airtight container layered with parchment paper in the refrigerator.

Ingredients 

Red Velvet Cookies:

  • 1/2 cup (113 g) butter, softened
  • 1 cup (198 g) granulated sugar
  • 1 large (50 g) egg
  • 2 teaspoons (9 g) vanilla extract
  • 1/4 cup (57 g) buttermilk
  • 1 1/2 tablespoons (23 g) red food coloring
  • 1 1/2 cups (180 g) all-purpose flour
  • 1/4 cup (21 g) unsweetened cocoa powder
  • 1/2 teaspoon (3 g) baking soda
  • 1/4 teaspoon (1 g) kosher salt

Cream Cheese Filling:

  • 1 (8-ounce) package (226 g) cream cheese, softened
  • 4 tablespoons (57 g) butter, softened
  • 1 1/2 cups (170 g) confectioner’s sugar, sifted
  • 1 teaspoon (5 g) vanilla extract

Instructions 

Red Velvet Cookies:

  • Preheat oven to 350º F. Line a baking sheet with parchment paper or a baking mat. 
  • Cream together the butter and the sugar until light and fluffy, about 3 minutes, in a large bowl with an electric mixer.  Add in the egg, vanilla extract, buttermilk, and the red food coloring.  Mix until well combined. 
     
  • Whisk together the flour, cocoa powder, baking soda, and salt. Then slowly stir into the butter and sugar mixture until well combined. 
  • Scoop 1 tablespoon of dough onto the prepared baking sheet. Space about 2 inches apart to get about 9 tablespoons of dough onto a large baking sheet. Roll the balls between your hands to get very smooth results when baked.
  • Bake for 10 minutes. Remove from the oven and allow to cool completely.

Cream Cheese Filling:

  • Mix together the  cream cheese and butter until light and fluffy. Add your confectioner’s sugar, 1/2 a cup at a time and slowly stir to incorporate. After each cup has been incorporated, turn the mixer onto the highest speed setting and for about 10 seconds to lighten the frosting. Add in vanilla and beat until well-blended, light and fluffy.
