Double Chocolate Caramel Skillet Cookie Recipe
No seriously, you certainly won’t be making and eating this by yourself and since it is fairly rich, this cookie definitely stretches to serve a crowd. But… be ready for all of the future requests to make this cookie all season long!
To make my Double Chocolate Caramel Skillet Brownie, I mix together my cookie dough and spread into one of my well seasoned cast iron skillets. The cookie dough includes two types of chocolate – cocoa powder and chocolate chips. For the chocolate chips, you can use your preference of milk, semisweet or dark or even a combination of chocolate chips! The more the merrier in this cookie recipe! You’ll also use toffee bits in this cookie recipe to impart the caramel flavor in every single bite!
Once the cookie dough is in the skillet, you’ll bake it for 25 to 30 minutes to the perfect amount of doneness for your tastes. I like to have the centers just a bit more undercooked and creamy than the exteriors so that it allows everyone to get their perfect kind of the skillet cookie. This generally is about the 25 minute mark for baking. For a more well done cookie, 30 minutes works well, but I caution you not to go too too far past or your cookie could be a bit drier than you’d like when serving.
Once the cookie has cooled a bit and just as I am about to serve, I like to pile on a few scoops of ice cream and drizzles of caramel sauce to really make this skillet cookie dessert sing!

Double Chocolate Caramel Skillet Cookie Recipe
Ingredients
- 1/2 cup (113 g) butter
- 1/2 cup (107 g) brown sugar, packed
- 1/2 cup (99 g) granulated sugar
- 1 (50 g) eggs
- 1 tablespoon (14 g) vanilla extract
- 1 1/4 cups (150 g) all-purpose flour
- 1/4 cup (21 g) unsweetened cocoa powder
- 1/2 teaspoon (1 g) kosher salt
- 1/2 teaspoon (2 g) baking soda
- 1/2 cup (120 g) toffee bits
- 1 cup (170 g) chocolate chips
- 1/4 cup (82 g) caramel sauce, optional
- vanilla ice cream, optional
Instructions
- Preheat the oven to 350º F.
- Cream the butter using a mixer, then add the sugars and mix until light and fluffy, about 3 minutes. Add the egg and vanilla until well combined. Add flour, cocoa powder, sea salt, and baking soda to butter mixture. Mix until all well combined.
- Stir in the toffee bits and chocolate chips.
- Pour the cookie dough into a 10-inch, well-seasoned cast iron skillet.
- Bake for 25 - 30 minutes based on your preference for the center to be more firm or creamy.
- Remove from the oven and allow to cool for a few minutes, then top the cookie with scoops of vanilla ice cream and drizzle with caramel sauce and serve.
