These Coconut Lime Waffles! Oh my goodness, I can’t even begin to tell you how amazing these flavors are in this waffle recipe.
Perfect for anytime of the year, but I have to say that they sure do brighten up a winter morning. Just the smell alone is enough to make you appreciate them!
But seriously. The topping of toasted coconut immediately grabs your attention when you first see them and then as you dig into them with your fork, you see the bits of coconut and specks of lime zest mingling throughout the waffle itself. Talk about heaven!
It is surely a breakfast you don’t want to miss. Or be late for.
Here’s my Coconut Lime Waffles recipe. You’ll seriously love it!

I made these this morning and they were amazing! My boyfriend said they were so good he “felt like he was being hugged from the inside”. Thanks for the recipe!
I wanted to let you know I tried this recipe recently, but I made it for me and my friend who is gluten free. She also is not a huge fan of shredded coconut. My solution was to make the recipe using 1 3/4 cups of the Americas Test Kitchen gluten free all purpose flour blend and 1/4 cup of coconut flour. I also used half melted butter and half melted coconut oil to try to give it more coconut flavor. It was super tasty and we both enjoyed it a lot.
Thanks so much for sharing that, Stacy! It sounds like the perfect solution for making these gluten-free and out of this world!
We made this recipe today for our first batch in the new waffle maker. Simply delicious!!
