Beef stew has always been a recipe that I can depend on my family loving and when I started making it in my Instant Pot, we all declared it one of our absolute favorite Instant Pot recipes! If you have an Instant Pot, then you will definitely want to add this to your must-make soon list!
The Best Instant Pot Beef Stew Recipe
For some time now, my Instant Pot has called a spot on my kitchen counter home. I use it so often that it only makes sense to leave it on the counter ready for the next adventure the next day. From eggs to potatoes to soups to making chicken stock, it certainly gets a workout!
And you probably know by now how much my family loves beef stew. I’ve shared my slow cooker version and Sam shared his recipe that he has made time and again on Scout camping trips and continues to make routinely on his nights to cook in the cookbook.
But friends, now that my Instant Pot sits just waiting to help out, I turn to it time after time for making this beef stew. The meat always turns out tender and practically falling apart, the vegetables are cooked to perfection, and the broth is rich and hearty like you’ve been stewing it all day. No one would ever guess that it came together so quickly!
What Type Roast is Best for Beef Stew
You want to use a large, more to the lean side, cut of beef from the front shoulder or the rear end of the cow. The specific cuts of beef to look for are:
- Chuck Roast
- Round Roast
- Rump Roast
- Pot Roast
Once your beef is selected, cut it into 1 1/2 to 2- inch pieces that are perfectly portioned for bite-sized pieces.
How to Make The Best Instant Pot Beef Stew Recipe
- Saute beef. Drizzle olive oil into Instant Pot. Set to saute setting. Add beef pieces and cook until all sides are browned. Add in Worcestershire sauce or coconut aminos and sprinkle with Stone House Seasoning.
- Cook. Add the onion, carrots, potatoes, beef stock, and tomato sauce to the Instant Pot. Stir to combine. Secure the lid to the Instant Pot, make sure the vent is closed and set for 35 minutes on high setting.
- Release Pressure and Serve. Allow the pressure to release naturally, about 20 minutes. Then, carefully remove the lid to the Instant Pot. Ladle out some of the juices from the beef stew into a small bowl. Whisk in the cornstarch to create a slurry. Then, stir the slurry into the beef stew.

I just added all these ingredients into my recipe app using only 2 pounds of chuck roast. For 6 servings, the calories per serving are 468 while your nutritional information says each serving is 143. What am I missing?

I made your recipe tonight and it was absolutely delicious! Thank you for sharing your recipe. Years ago, b4 the Instant Pot, I had a pressure cooker and I would make Pot Roast or Guinness Stew, which is fabulous.
I just wanted to let you know that I had reviewed the video quickly but I didn’t realize that you had put cornstarch in with the meat in the beginning. I actually thought that it was your seasoning that you had added. I also read the directions and that’s what I actually used when making the stew. Then I realized, wait when do I add the cornstarch, but I saw it at the end of your directions, so I waited until the end to add it. I then had went through the video and saw that you actually put your cornstarch in the beginning and not the end. Is that how you usually do it, put the cornstarch in with the meat? Just curious because even though I did it at the end, as in the directions, it turned out perfect!
Sandi, I’m so glad you loved this beef stew. You can add the cornstarch either in the beginning as in the video or at the end as in the written recipe.
Does this same exact recipe work if you have a crockpot (idk the difference between the two)?
No, Xanna. The crockpot (slow cooker) is a different appliance than an Instant Pot. The Instant Pot cooks food under pressure. You can use my Slow Cooker Beef Stew Recipe for you crockpot. I hope you enjoy.

Just made this instant pot beef stew . Delicious. I did add a couple sprigs of thyme and a small sprig of rosemary. I didn’t h ave tomato sauce but used paste about a tablespoon.

You sure can!
This is 100% not a criticism of you in any way, but I see people complain all the time about instant pot recipe “total time” to prepare is not accurate and messes with dinner planning. In the body of the post you show 35 cook and then 20 natural release which is already 55 minutes which doesn’t include the time to get to pressure in the beginning. I love my instant pot and don’t care about the extra time but that’s because I know how to plan for the cook times (and also I always read the whole recipe first!) but someone who looks at the total time is going to be pretty annoyed if they planned for a 6:00 dinner time and started at 5:20!
Please please don’t take this as criticism bc I honestly couldn’t count how many recipes of yours are my family’s favorites and I just respect the heck out of you!
