A light and creamy egg salad makes the perfect sandwich for a quick and easy brunch, lunch or supper. It has always been one of my go-to recipes when we have left over hard boiled eggs, but it is so simple and delicious I find myself hard boiling eggs just for these Classic Egg Salad Sandwiches!
How to Make the Best Egg Salad Sandwiches
To make perfect egg salad sandwiches, begin by making hard boiled eggs. I share how to make them in the Instant Pot as well as the classic hard boiled egg recipe on the stove top that I’ve used since high school.
For your egg salad, you’ll need hard boiled eggs, mayonnaise, salt and pepper.
Peel your eggs and add them to a bowl.
Using a fork, simply mash the eggs until they are in small pieces.
Add the salt and pepper.
And then stir in the mayonnaise until well-combined.
Then, spread your egg salad onto your favorite sandwich bread. For the bread, I love to use a good sourdough bread. It is also delicious if you have lightly toasted it as well.
Optional Add Ins
Depending on what you prefer at the moment, you can also add other ingredients to this simple, classic sandwich recipe. I love to include
- a slice of butter lettuce
- thinly sliced radishes
- sliced avocado
- a sprinkle of hot sauce

Ingredients
- 6 large hard-boiled eggs
- 1/4 cup mayonnaise
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 12 slices bread
Optional Add-Ins
- butter lettuce
- radishes, thinly sliced
- avocado, thinly sliced
- hot sauce
Instructions
- Peel hard boiled eggs and place into a medium bowl. Mash with a fork until in small pieces. Stir in mayonnaise, salt and pepper. Spread onto one slice of bread. Top with second piece of bread. Slice in half and serve.

I add green olives to my egg salad.
I love egg salad with green olives.
I notice you did not add chopped green olives as add ins. YUM
This is how I make my egg salad sandwiches too. I add finely cut green onions to mine. They are sure delish. Thank you for posting so others can learn. Good use for leftover Easter eggs too. In your instructions you say to peel the eggs and add them to a boil. I think you meant add them to a bowl. It threw me off for a minute. I love your recipes and the step by step pictures. Thanks!
