Air fryer sweet potato fries or baked sweet potato fries are even more crispy and delicious than deep-fried versions – and use much less oil! Ready in minutes in the air fryer or make a larger quantity easily in the oven with just a couple of ingredients. Perfect as a snack or casual supper alongside some oven fried chicken or pulled pork sandwiches!

These homemade sweet potato fries are an absolute favorite in my house. Crispy, healthy, and delicious, they are made with only 3 simple ingredients and are ready in minutes. I love to bake them in my oven for larger batches or cook them in my air fryer for an even quicker option. They are delicious with so many dishes. Serve them warm with a simple bit of sea salt or with my comeback sauce for dipping. Yum!

How to Make the Sweet Potato Fries

Make these fries in minutes by either of two methods with a few ingredients:

Ingredients

  • Sweet Potato – Make sure your potato has been scrubbed clean.
  • Olive Oil – you can also use canola oil or avocado oil
  • Sea Salt – I prefer to use sea salt in this recipe. You can use your favorite type of salt.
  • Cornstarch (Optional) – While optional, just 1/2 teaspoon of cornstarch can help to make the outside of the fries even crispier. Toss the fries in it before you add the olive oil if using.
  • Seasonings (Optional) – I’ve included a few recipe variations you may enjoy later in the recipe. If using any of these optional seasonings, use them after the fries have cooked. This prevents the seasonings from burning.

Recipe Variations

Stone House Fries – Sprinkle cooked fries with 1/4 teaspoon Stone House Seasoning.

Spicy Sweet Potato Fries – Similar to my spicy sweet potato wedges, you’ll add 1/4 – teaspoon each chili powder and black pepper to the cooked fries and toss.

Parmesan Sweet Potato Fries – Sprinkle fries with 1/4 cup grated parmesan and 1/4 teaspoon Stone House Seasoning right after you remove them from the air fryer or oven.

Cinnamon Sugar Fries – Sprinkle fries with 1/4 teaspoon ground cinnamon and 1 teaspoon sugar once you remove them from the air fryer or oven. 

Step-by-Step Instructions

  1. Prep and slice. Peel the potato, cut off the ends, and then slice the sweet potatoes lengthwise into 1/4-inch slices. Then, turn the slices onto their flat sides so that on the cutting board for easier slicing. Slice into uniform-sized fries for even cooking. Uniform slices are essential as they will cook more evenly, and thick potato slices won’t get as crispy.
  2. Toss in cornstarch (if using). The cornstarch is optional but does help to crisp the fries even more. Make sure the potato slices are patted dry. Then, put them in a plastic bag with the cornstarch. Shake until all the slices are coated.
  3. Drizzle and toss with oil. Then, place the uncooked fries on a baking sheet. Drizzle with the olive oil and add the salt. Toss to make sure that all of the fries are coated.
  4. Cook – Two Methods (to follow). Then, cook according to the instructions for either the air fryer or the oven-baked sweet potato fries based on your preference.

Air Fryer Sweet Potato Fries

  • Preheat the air fryer to 400º F.
  • Arrange the potatoes in a single layer in the air fryer basket.
  • Once the air fryer is heated, cook for 8 to 12 minutes, tossing as needed to ensure that all the fries cook uniformly. Extend the cooking time until all are cooked evenly. (Note: My air fryer takes 10 minutes, but the time will depend on the size of the fries and your particular air fryer.)
  • Serve warm.

Oven Baked Sweet Potato Fries

  • Preheat the oven to 425º F.
  • Arrange the potatoes in a single layer on a baking sheet. Do not put more than a single layer.
  • Once the oven is heated, cook them for 20 minutes. Turn the fries using a metal spatula and cook for 10 – 15 more minutes. Watch the fries closely at this stage so they do not burn.
  • Serve warm.

Recipe Tips

  • Slice the sweet potato into small, uniform-sized slices so that they cook evenly and crispy.
  • Toss the potato slices in cornstarch before tossing in oil to make the outsides of the fries extra crispy!

Storage Tips

To refrigerate. Place completely cooled fries in an airtight container. Store in the refrigerator for up to 5 days. To reheat from the refrigerator, place in the oven or air fryer preheated to 400º F for about 5 minutes until crisp.

To freeze. Allow fries to completely cool. Place in an airtight container and in the freezer for up to 2 months. Reheat in the oven or air fryer preheated to 400º F for about 10 minutes until crisp.

Frequently Asked Questions

Why do some baked sweet potato fries not get crispy?

There could be too many fries on one baking pan. Make sure the fries are in a single layer with a bit of space between each piece for the most crispy fries.
Also, make sure that the slices are uniform, 1/4 inch slices and not sliced too thick. Make sure the slices are DRY before you toss them in cornstarch and/or oil. Wet potato slices may steam in the oven instead of getting crispy when baked.

Can you eat sweet potato skin?

Sure! As long as the potato is scrubbed clean it is fine to leave a bit of the skin on the fries to cook them.

Ingredients 

  • 1 medium sweet potato
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt

Optional Ingredients

  • 1/2 teaspoon cornstarch

Instructions

    My family loves sweet potato fries. Years ago, when we were first discovered them, the restaurant served them with honey. Now, we like them so much that we skip the honey and just eat the same as the baked them.
